The Journey of Chef Baldev Singh
I grew up in a small village in Punjab, India, where the seasons and fresh produce shaped my love for cooking. My culinary journey began at my family’s dhaba, a roadside restaurant. There, I learned the delicate art of grilling meats in the tandoor, preparing everything from chicken tikka to kababs, and crafting rich, spiced curries. This experience set the foundation for what would become a lifelong love of food.
The Opportunity That Changed Everything
When I was in my late teens, an Indian businessman from Iran dined at our dhaba and was so impressed by my cooking that he invited me to work with him in Isfahan, Iran. That was the beginning of my international culinary journey. After a few years, I moved to the U.S. and worked under international Chef Kapoor in New York City before exploring the San Francisco and Los Angeles restaurant scene.
Bringing Indian Cuisine to New Mexico
In 1991, I decided to settle in Santa Fe, New Mexico, to open my own restaurant, India Palace. The support from the New Mexican community was overwhelming, and I later opened additional locations, including the beloved India Palace in Albuquerque. I expanded my culinary reach with India Grill and India Food and Grocery, and even opened a successful restaurant in San Antonio, Texas. Now, after a brief break, I’m back and ready to share my cooking with you once again at Kabab & Curry.
